Fluffy Pancakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter (plus extra for greasing the pan)
- 1 teaspoon vanilla extract (optional)
- Maple syrup and butter (for serving)
Instructions:
- Prepare the batter:
- In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
- Gradually pour the wet ingredients into the dry ingredients, whisking gently until combined. Do not overmix; it’s okay if the batter is slightly lumpy.
- Heat the pan:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Cook the pancakes:
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancake and cook for another 2-3 minutes, or until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve:
- Stack the pancakes on a plate and top with butter and a generous drizzle of maple syrup.
- Optionally, add fresh fruits like strawberries or blueberries for extra flavor.
