Ingredients:

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cherry tomatoes (halved)
  • 1 yellow bell pepper (sliced)
  • 1/2 cup carrots (sliced thin)
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
For the Creamy Sauce:
  • 1 1/2 cups heavy cream
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Instructions:

  1. Prepare the vegetables:
    • Preheat your oven to 375°F (190°C).
    • Arrange the broccoli, cauliflower, cherry tomatoes, bell pepper, and carrots in a greased baking dish.
  2. Prepare the creamy sauce:
    • In a mixing bowl, whisk together the heavy cream, eggs, garlic powder, Italian seasoning, salt, and pepper.
  3. Assemble the casserole:
    • Pour the creamy sauce evenly over the vegetables in the baking dish.
    • Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  4. Bake the casserole:
    • Place the dish in the oven and bake for 25-30 minutes, or until the cheese is golden and bubbly and the vegetables are tender.
  5. Serve:
    • Let the casserole rest for 5 minutes before serving.
    • Garnish with fresh parsley or basil if desired.
