Coconut Cream Dessert Cups

 

 

 

Ingredients:

  • 2 cups coconut milk
  • 1 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (plus extra for garnish)
  • Optional: Whipped cream for topping

Instructions:

  1. Mix the ingredients:
    • In a medium saucepan, whisk together the coconut milk, whole milk, sweetened condensed milk, sugar, cornstarch, and salt until smooth.
  2. Cook the pudding:
    • Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble (about 8-10 minutes).
    • Once thickened, remove the saucepan from the heat and stir in the vanilla extract and shredded coconut.
  3. Assemble the dessert cups:
    • Divide the pudding evenly among small serving cups or glasses.
    • Let the pudding cool to room temperature, then chill in the refrigerator for at least 2 hours.
  4. Garnish and serve:
    • Before serving, top each dessert cup with a sprinkle of shredded coconut.
    • Optionally, add a dollop of whipped cream for an extra touch of indulgence.
