Creamy Mushroom Chicken Recipe
Ingredients:
- 4 chicken thighs or breasts
- 2 tbsp olive oil
- Salt and black pepper to taste
- 2 tbsp unsalted butter
- 200g (2 cups) mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream (or low-fat cream for a lighter version)
- 1 tsp Dijon mustard
- 1 tsp dried thyme or fresh thyme sprigs
- Optional: 1 tbsp grated Parmesan cheese
- Fresh parsley for garnish
Instructions:
- Prepare the Chicken:
- Season chicken thighs or breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
- Cook the Mushrooms:
- In the same skillet, add butter and sauté mushrooms until tender and golden (about 5-7 minutes). Stir in minced garlic and cook for 1-2 minutes until fragrant.
- Make the Creamy Sauce:
- Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom. Stir in heavy cream, Dijon mustard, and thyme.
- Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
- Combine and Simmer:
- Return the chicken to the skillet, ensuring it’s coated in the creamy mushroom sauce. Cover and simmer on low heat for 15-20 minutes until the chicken is cooked through.
- Serve:
- Sprinkle with Parmesan cheese (optional) and garnish with fresh parsley.
- Serve hot with mashed potatoes, rice, or crusty bread.
