Creamy Mushroom Chicken Recipe

 

 

 

Ingredients:

  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter
  • 200g (2 cups) mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or low-fat cream for a lighter version)
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme or fresh thyme sprigs
  • Optional: 1 tbsp grated Parmesan cheese
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Chicken:
    • Season chicken thighs or breasts with salt and pepper.
    • Heat olive oil in a skillet over medium heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  2. Cook the Mushrooms:
    • In the same skillet, add butter and sauté mushrooms until tender and golden (about 5-7 minutes). Stir in minced garlic and cook for 1-2 minutes until fragrant.
  3. Make the Creamy Sauce:
    • Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom. Stir in heavy cream, Dijon mustard, and thyme.
    • Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  4. Combine and Simmer:
    • Return the chicken to the skillet, ensuring it’s coated in the creamy mushroom sauce. Cover and simmer on low heat for 15-20 minutes until the chicken is cooked through.
  5. Serve:
    • Sprinkle with Parmesan cheese (optional) and garnish with fresh parsley.
    • Serve hot with mashed potatoes, rice, or crusty bread.
