Creamy Baked Pork Chops with Potatoes

 

 

Ingredients:

  • 4 pork chops (bone-in or boneless)
  • 4 medium potatoes, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup chicken broth
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp dried thyme or rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Pork Chops:
    • Preheat the oven to 200°C (400°F).
    • Season the pork chops with salt and pepper.
    • Heat olive oil in a skillet over medium heat. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove and set aside.
  2. Prepare the Potatoes:
    • Arrange the sliced potatoes in a single layer in a greased baking dish.
    • Season the potatoes with salt, pepper, and thyme.
  3. Make the Creamy Sauce:
    • In the same skillet, sauté the onion until softened.
    • Add garlic and cook for another minute.
    • Pour in the heavy cream, chicken broth, and Dijon mustard. Stir in the Parmesan cheese and let it simmer for 2-3 minutes until slightly thickened. Adjust seasoning with salt and pepper.
  4. Assemble and Bake:
    • Pour half of the creamy sauce over the potatoes. Place the seared pork chops on top.
    • Pour the remaining sauce over the pork chops.
    • Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the sauce is bubbly.
  5. Serve:
    • Garnish with fresh parsley and serve hot with a side salad or steamed vegetables.

Tips:

  • For extra flavor, add a sprinkle of paprika to the pork chops before searing.
  • Substitute pork chops with chicken breasts if preferred.
  • Add a handful of shredded mozzarella on top for extra cheesiness.
