Ingredients:

  • For Roasting:
    • 1 large cauliflower head, cut into florets
    • 3 tablespoons olive oil
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon garlic powder
    • Salt and pepper to taste
  • Soup Base:
    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 1 medium potato, peeled and diced
    • 4 cups vegetable or chicken broth
    • 1 cup heavy cream or coconut milk (for a dairy-free option)
    • 2 tablespoons butter or olive oil
    • 1/2 teaspoon ground cumin
    • Salt and pepper to taste
  • Optional Garnish:
    • Roasted cauliflower florets
    • Fresh herbs (parsley, chives, or basil)
    • Croutons or diced cheese
    • A drizzle of olive oil or cream

Instructions:

  1. Roast the Cauliflower:
    • Preheat the oven to 425°F (220°C).
    • Toss cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and pepper.
    • Spread the florets on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden brown and tender.
  2. Sauté the Base Ingredients:
    • In a large pot, heat butter or olive oil over medium heat.
    • Add the onion and garlic, sautéing until soft and fragrant (about 3-4 minutes).
  3. Add Vegetables and Broth:
    • Add the diced potato, roasted cauliflower (reserve a few florets for garnish), and ground cumin.
    • Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
  4. Blend the Soup:
    • Use an immersion blender or a countertop blender to puree the soup until smooth. If needed, add more broth to reach your desired consistency.
  5. Add Cream:
    • Stir in the heavy cream or coconut milk and let it simmer for another 5 minutes. Taste and adjust seasoning with salt and pepper.
  6. Serve:
    • Ladle the soup into bowls. Top with the reserved roasted cauliflower florets, fresh herbs, and croutons or diced cheese.
    • Optionally, drizzle with olive oil or a splash of cream for added richness.
