Ingredients:

  • For the Meatloaf:
    • 1 1/2 pounds ground beef (or a mix of beef and pork)
    • 1 cup breadcrumbs or crushed crackers
    • 1/2 cup milk
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 2 large eggs
    • 2 tablespoons ketchup
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon dried parsley
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Glaze:
    • 1/2 cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon Dijon mustard (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Line a baking sheet or loaf pan with aluminum foil for easy cleanup.
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, garlic, eggs, ketchup, Worcestershire sauce, parsley, salt, and pepper.
    • Mix gently with your hands until just combined (do not overmix to avoid a tough texture).
  3. Shape the Meatloaf:
    • Transfer the meat mixture to the prepared baking sheet or loaf pan.
    • Shape it into a loaf (if using a baking sheet) or press it evenly into the pan.
  4. Prepare the Glaze:
    • In a small bowl, mix together ketchup, brown sugar, and Dijon mustard (if using).
    • Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake the Meatloaf:
    • Bake in the preheated oven for 45-50 minutes.
    • Remove the meatloaf from the oven, spread the remaining glaze on top, and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Slice:
    • Let the meatloaf rest for 5-10 minutes before slicing to allow the juices to settle.
  7. Serve:
    • Slice and serve with mashed potatoes, steamed vegetables, or a green salad.

This classic meatloaf is perfect for family dinners and makes excellent leftovers. Let me know if you’d like suggestions for variations or substitutions!
