Almond Cream Cake
Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
For the Almond Cream:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup all-purpose flour
- 1 teaspoon almond extract
For the Topping:
- 1/2 cup sliced almonds
- Powdered sugar, for dusting

- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch (20×20 cm) baking pan or line it with parchment paper.
- Prepare the Cake Batter:
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Prepare the Almond Cream:
- In a medium bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs, one at a time, followed by the almond extract.
- Mix in the almond flour and all-purpose flour until well combined.
- Assemble the Cake:
- Pour the cake batter into the prepared baking pan and spread it evenly.
- Using a piping bag or a spoon, pipe or spread the almond cream on top of the cake batter in an even layer.
- Sprinkle the sliced almonds over the top.
- Bake the Cake:
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve:
- Once the cake is completely cooled, dust the top with powdered sugar.
- Slice and serve. Enjoy!

- Ensure the butter is softened to room temperature for both the cake batter and almond cream for the best texture.
