Apple Cinnamon Roll-Ups
Ingredients:
For the Apple Filling:
- 4 medium apples, peeled, cored, and diced
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter
For the Roll-Ups:
- 8 small flour tortillas
- 1/4 cup butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
For the Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract

- Prepare the Apple Filling:
- In a medium saucepan, melt the butter over medium heat.
- Add the diced apples, granulated sugar, ground cinnamon, and lemon juice.
- Cook, stirring occasionally, until the apples are tender and the mixture is slightly thickened, about 10 minutes.
- Remove from heat and let it cool slightly.
- Prepare the Caramel Sauce:
- In a medium saucepan, combine the granulated sugar and water.
- Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture turns a deep amber color.
- Remove from heat and carefully whisk in the heavy cream, butter, salt, and vanilla extract until smooth.
- Let the caramel sauce cool to room temperature.
- Assemble the Roll-Ups:
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine the granulated sugar and ground cinnamon for the roll-ups.
- Brush one side of each tortilla with melted butter and sprinkle with the cinnamon-sugar mixture.
- Place a spoonful of the apple filling on one end of each tortilla and roll it up tightly.
- Bake the Roll-Ups:
- Place the roll-ups seam-side down on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden and crispy.
- Serve:
- Drizzle the caramel sauce over the warm apple cinnamon roll-ups.
