Apple Pie Enchiladas
*Ingredients
°4 Apples, peeled, cored and cut into wedges
°60 ml (1/4 cup) butter
°60 ml (1/4 cup) brown sugar, tightly packed
°4 medium Old El Paso™ flour tortillas (6 inches [15 cm])
° cooking spray
° vanilla ice cream
° 60 ml (1/4 cup) caramel sauce; heated

Preheat the oven to 230°C (450°F). Spray an 8 or 9 inch (20 or 23 cm) baking dish with cooking spray (2 quarts [1.9 L]).

In a 10-inch skillet, heat apples and butter over medium-high heat for 5 to 7 minutes or until apples are soft.Add the brown sugar and cook until melted.

Place a quarter of the apples on each tortilla and then roll up. Place on a baking sheet, seam side down. Spray the surface of the enchiladas with cooking spray.

Bake for 10 to 15 minutes or until golden brown.5
Serve with ice cream and decorate with a dash of caramel sauce.
