Asian Chicken Salad with Sesame Dressing

 

Ingredients:

For the Salad:

  • 2 cups mixed salad greens
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced red cabbage
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts or cashews
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp sesame seeds (for garnish)

For the Sesame Dressing:

  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp sesame seeds

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat the olive oil in a skillet over medium heat.
    • Cook the chicken breasts until fully cooked and golden brown on both sides (about 6-7 minutes per side).
    • Remove from the skillet and let rest for 5 minutes before slicing into strips.
  2. Prepare the Salad:
    • In a large bowl, combine the mixed greens, shredded carrots, red cabbage, green onions, and chopped nuts.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, olive oil, minced garlic, grated ginger, and sesame seeds until well combined.
  4. Assemble the Salad:
    • Arrange the salad mixture on a serving platter or individual plates.
    • Top with the sliced chicken strips.
    • Drizzle the sesame dressing over the salad.
    • Sprinkle with additional sesame seeds for garnish.
  5. Serve:
    • Serve immediately and enjoy your fresh, flavorful Asian Chicken Salad!
