Asian Chicken Salad with Sesame Dressing
Ingredients:
For the Salad:
- 2 cups mixed salad greens
- 1 cup shredded carrots
- 1/2 cup thinly sliced red cabbage
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts or cashews
- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp sesame seeds (for garnish)
For the Sesame Dressing:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1 tbsp sesame seeds
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Cook the chicken breasts until fully cooked and golden brown on both sides (about 6-7 minutes per side).
- Remove from the skillet and let rest for 5 minutes before slicing into strips.
- Prepare the Salad:
- In a large bowl, combine the mixed greens, shredded carrots, red cabbage, green onions, and chopped nuts.
- Prepare the Dressing:
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, olive oil, minced garlic, grated ginger, and sesame seeds until well combined.
- Assemble the Salad:
- Arrange the salad mixture on a serving platter or individual plates.
- Top with the sliced chicken strips.
- Drizzle the sesame dressing over the salad.
- Sprinkle with additional sesame seeds for garnish.
- Serve:
