2 cups granulated sugar
2 cups light brown sugar, packed
1 cup whole milk

1 teaspoon baking soda
1 teaspoon pure vanilla extract
2 cups chopped pecans or walnuts

1. Prepare your pan
Grease a 9×9-inch (23×23 cm) baking pan and set aside. You can also line it with parchment paper for easier removal.
2. Combine and heat the sugars
In a large, heavy saucepan, combine granulated sugar, brown sugar, milk, and corn syrup.

Cook over medium heat, stirring constantly until the sugars dissolve completely.
3. Add butter and soda
Add butter and baking soda, stirring until melted. The mixture will foam slightly — this is normal.

4. Cook to soft-ball stage
Continue cooking without stirring until the mixture reaches the soft-ball stage (about 236°F / 113°C on a candy thermometer).
If you don’t have a thermometer, drop a small amount into cold water — it should form a soft, pliable ball.

Remove from heat and let cool for about 15 minutes. Do not stir while cooling — this helps the fudge set properly.
6. Beat and flavor
Once cooled slightly, add vanilla and beat with a wooden spoon until the mixture begins to lose its gloss and thicken.
Quickly stir in the chopped pecans.
