Avocado Egg Wrap Recipe
Ingredients:
- 4 large eggs
- 2 ripe avocados
- 1 small onion, finely chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 teaspoon paprika or chili powder (optional, for a bit of spice)
- 4 large tortillas or wraps
- Optional: fresh herbs (like cilantro or parsley) for garnish
Instructions:
- Prepare the Eggs:
- Place the eggs in a pot and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 10-12 minutes for hard-boiled eggs.
- Drain the hot water and transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and slice them in half.
- Prepare the Avocado Mixture:
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth but still slightly chunky.
- Add the chopped onion, lemon juice, salt, and pepper to the mashed avocado. Mix well to combine.
- Assemble the Wraps:
- Lay out the tortillas or wraps on a flat surface.
- Spread a generous amount of the avocado mixture onto each tortilla.
- Place the sliced eggs on top of the avocado mixture. You can arrange them whole or chop them into smaller pieces.
- Sprinkle a bit of paprika or chili powder over the eggs if desired.
- Roll the Wraps:
- Carefully roll up each tortilla, tucking in the sides as you go to keep the filling inside.
- Slice the wraps in half if desired, making them easier to eat.
- Serve:
