Baked Chicken Chimichangas Recipe
I love making 6-8 of these when my husband and his friends watch the game! I love feeding a crowd!
Ingredients:
2 cups cooked chicken, shredded
1 cup Monterey Jack cheese, grated
1/2 cup salsa, plus extra for serving

1 can (4 ounces) green chiles, diced , drained
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon chili powder
Salt and pepper to taste

6 large flour tortillas
Olive oil or cooking spray for greasing
Optional for serving: Sour Cream, Guacamole, and Fresh Chopped Cilantro
Instructions:
Preheat the oven to 400°F to create a warm environment for baking your chimichangas.

In a large bowl, combine chicken, cheese, salsa, green chilies, cumin, oregano and chili powder.Season with salt and pepper.
Lay a tortilla flat, place some of the chicken mixture in the middle, fold in the sides and roll up tightly to cover the filling.
Place chimichangas seam side down on a greased baking sheet so that they bake evenly.
Brush the top with olive oil or spray with cooking spray and then bake until golden brown, 25-30 minutes.
Allow to cool slightly before serving, garnish with sour cream, guacamole and coriander if desired.
