Ingredients

  • For the custard:
    • 4 large eggs
    • 1/2 cup granulated sugar
    • 2 cups whole milk
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract
    • Zest of 1 lemon (optional, for flavor)
    • A pinch of ground nutmeg or cinnamon (optional)
  • For the tart shell (optional):
    • 1 pre-made pie crust (or use a homemade shortcrust pastry)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the tart shell (optional):
    • If using a tart shell, roll out the pie crust and press it into a tart pan, trimming the edges. Poke holes in the bottom with a fork and blind bake it by lining the crust with parchment paper and filling it with pie weights or dried beans. Bake for 10 minutes, then remove the weights and bake for another 5 minutes until lightly golden. Let it cool.
  3. Make the custard:
    • In a mixing bowl, whisk together the eggs and sugar until the mixture is smooth and pale.
    • Heat the milk and cream in a saucepan over medium heat until just warm (do not let it boil). Gradually whisk the warm milk mixture into the egg mixture to temper it.
    • Stir in the vanilla extract and lemon zest, if using.
  4. Assemble the tart:
    • Pour the custard mixture into the tart shell (if using) or directly into a greased round baking dish.
    • Optionally, sprinkle a pinch of nutmeg or cinnamon on top for added flavor.
  5. Bake:
    • Place the tart in the preheated oven and bake for 30-40 minutes, or until the custard is set but still slightly jiggly in the center. The top should have a light golden color.
  6. Cool and serve:
    • Allow the tart to cool to room temperature, then refrigerate for at least 2 hours before slicing and serving. Serve chilled or at room temperature.

Variations and Tips

  • Caramelize the top: Sprinkle sugar on top after baking and caramelize it with a blowtorch for a crème brûlée effect.
  • Make it crustless: Skip the tart shell for a simple baked custard dessert.
  • Add flavors: Infuse the milk with spices like cinnamon sticks or star anise while heating, then strain before mixing.
