Baked Pork Chop Casserole with Potatoes
Ingredients:
- 4-6 bone-in pork chops
- 4-5 medium potatoes, peeled and sliced thinly
- 1 cup shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
- 1/2 cup milk or heavy cream
- 1 onion, thinly sliced
- 1-2 cloves garlic, minced
- Salt and pepper to taste
- Paprika (optional)
- Fresh parsley, chopped (for garnish)
- Olive oil or butter for frying
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Pork Chops:
- Season the pork chops with salt, pepper, and paprika.
- In a large skillet, heat some olive oil or butter over medium-high heat.
- Sear the pork chops on both sides until browned, about 3-4 minutes per side. Set aside.
- Prepare the Potatoes and Sauce:
- Grease a large baking dish.
- Layer the thinly sliced potatoes and onions in the baking dish.
- In a bowl, mix the cream of mushroom soup with milk or heavy cream until smooth.
- Pour the mixture over the potatoes, spreading it evenly.
- Assemble the Casserole:
- Place the seared pork chops on top of the potatoes.
- Cover the dish with aluminum foil.
- Bake:
- Bake in the preheated oven for about 45 minutes to 1 hour, or until the potatoes are tender.
- Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Garnish and Serve:
- Once out of the oven, let the casserole rest for a few minutes.
- Garnish with freshly chopped parsley and serve hot.
