Baked Pork Chop Casserole with Potatoes

 

Ingredients:

  • 4-6 bone-in pork chops
  • 4-5 medium potatoes, peeled and sliced thinly
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup milk or heavy cream
  • 1 onion, thinly sliced
  • 1-2 cloves garlic, minced
  • Salt and pepper to taste
  • Paprika (optional)
  • Fresh parsley, chopped (for garnish)
  • Olive oil or butter for frying

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Pork Chops:
    • Season the pork chops with salt, pepper, and paprika.
    • In a large skillet, heat some olive oil or butter over medium-high heat.
    • Sear the pork chops on both sides until browned, about 3-4 minutes per side. Set aside.
  3. Prepare the Potatoes and Sauce:
    • Grease a large baking dish.
    • Layer the thinly sliced potatoes and onions in the baking dish.
    • In a bowl, mix the cream of mushroom soup with milk or heavy cream until smooth.
    • Pour the mixture over the potatoes, spreading it evenly.
  4. Assemble the Casserole:
    • Place the seared pork chops on top of the potatoes.
    • Cover the dish with aluminum foil.
  5. Bake:
    • Bake in the preheated oven for about 45 minutes to 1 hour, or until the potatoes are tender.
    • Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Once out of the oven, let the casserole rest for a few minutes.
    • Garnish with freshly chopped parsley and serve hot.
