Banana Bread with Macapuno Recipe
Ingredients:
BOWL
2 packages (4 cups) roasted bananas
1 can (400 ml) coconut milk
1 can (300 ml) whole milk
bottle (about 3/4 cup) sweet macapuno . 2 cans (150 ml) whole milk
1 egg
Leftover sweet macapuno/coconut flakes from 1/4 cup
Instructions:
Preheat the oven to 175°C. Grease the baking tray with melted butter or margarine.
In a mixing bowl, combine mashed potatoes, coconut milk, whole milk, sweet macapuno/coconut milk, eggs and vanilla. Mix well. Add optional sugar according to your taste.
Pour the potato mixture into the greased pan and spread evenly.
Bake in the preheated oven for 45 minutes to 1 hour or until the tops of the potatoes are dry.
While the potato bread is baking, prepare the toppings. In a separate bowl, whisk the milk and eggs until well combined. Stir in remaining sweet macapuno/coconut.
After 45 minutes, remove the banana cake from the oven and pour the mixture over it.
Return the pan to the oven and bake for another 10-15 minutes or until heated through.
Remove the banana cake from the oven and let it cool slightly. Spread with cheddar cheese
