Banana Cream Cheesecake Recipe

 

Ingredients:

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour

Banana Cream Topping:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 3-4 ripe bananas, sliced
  • 1 package (3.4 oz) instant banana pudding mix
  • 2 cups cold milk

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine the graham cracker crumbs and sugar.
    • Add the melted butter and mix until the crumbs are well coated and hold together when pressed.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan.
    • Bake for 8-10 minutes, or until the crust is lightly golden. Let it cool completely.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Add the sugar and mix until well combined.
    • Mix in the sour cream and vanilla extract.
    • Add the eggs one at a time, mixing well after each addition.
    • Add the flour and mix until just combined.
    • Pour the cheesecake filling into the cooled crust.
    • Bake for 50-60 minutes, or until the center is set and the edges are lightly browned.
    • Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
    • Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  3. Prepare the Banana Cream Topping:
    • In a mixing bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
    • In another bowl, whisk together the instant banana pudding mix and cold milk until smooth and thickened.
    • Gently fold the whipped cream into the banana pudding mixture until well combined.
    • Spread the banana cream topping evenly over the cooled cheesecake.
  4. Decorate and Serve:
    • Top the cheesecake with sliced bananas just before serving.
    • Optionally, garnish with additional whipped cream and a dusting of powdered sugar.
