Banana Cream Cheesecake Recipe
Ingredients:
Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
Banana Cream Topping:
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 tbsp vanilla extract
- 3-4 ripe bananas, sliced
- 1 package (3.4 oz) instant banana pudding mix
- 2 cups cold milk
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs and sugar.
- Add the melted butter and mix until the crumbs are well coated and hold together when pressed.
- Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan.
- Bake for 8-10 minutes, or until the crust is lightly golden. Let it cool completely.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the sugar and mix until well combined.
- Mix in the sour cream and vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Add the flour and mix until just combined.
- Pour the cheesecake filling into the cooled crust.
- Bake for 50-60 minutes, or until the center is set and the edges are lightly browned.
- Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the Banana Cream Topping:
- In a mixing bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
- In another bowl, whisk together the instant banana pudding mix and cold milk until smooth and thickened.
- Gently fold the whipped cream into the banana pudding mixture until well combined.
- Spread the banana cream topping evenly over the cooled cheesecake.
- Decorate and Serve:
- Top the cheesecake with sliced bananas just before serving.
- Optionally, garnish with additional whipped cream and a dusting of powdered sugar.
