Ingredients:

  • 4 large potatoes, peeled and grated
  • 1 medium onion, grated
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Prepare Potatoes: After grating the potatoes, squeeze out as much liquid as possible to ensure they fry up crispy.
  2. Mix Ingredients: In a large bowl, combine the grated potatoes and onions. Add eggs, flour, salt, and pepper. Mix until well combined.
  3. Form Patties: Heat oil in a frying pan over medium heat. Spoon portions of the potato mixture into the hot oil, flattening them into pancakes using a spatula.
  4. Cook: Fry each pancake until golden brown and crispy, about 4-5 minutes per side.
  5. Serve: Drain on paper towels and serve hot with sour cream or applesauce.
