Blackberry ice cream
Ingredients:
– 2 cups fresh blackberries
– 1 cup refined sugar
– 1 cup whole milk
– 2 cups whipped cream
– 1 teaspoon vanilla extract
– A pinch of salt
Instructions for Use:
1 . Preparation of blackberry puree:
– Wash the blackberries with cold water and dry them.
– Puree blackberries in a blender or food processor until smooth.
– Pass the puree through a fine sieve to remove the seeds, pressing with a spoon to extract as much juice as possible. Stop the seeds.
2. Prepare the ice cream base:
– In a medium saucepan, combine blackberry puree and powdered sugar over medium heat.
– Stir continuously for about 3-4 minutes until the sugar is completely dissolved and the mixture becomes smooth.
– Remove the pan from the stove and let the mixture cool to room temperature.
3. Prepare the ice cream mixture:
– In a separate mixing bowl, stir together the whole milk, whipped cream, vanilla extract and a pinch of salt.
– After the blackberry mixture has cooled, slowly add the milk and cream mixture and beat until well combined.
4. Place the mixture:
– Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors and mixture to cool thoroughly.
5. Ice Extraction:
– Once the mixture has cooled, pour it into an ice cream maker and process according to the manufacturer’s instructions until it reaches a thick, creamy consistency.
6. Freezing and serving:
– Stir crushed ice into the cooled mixture and smooth the top with a spatula.
– Cover with a lid or plastic wrap and freeze for at least 4 hours or until ice cream is hard.
7. Serve and enjoy:
– Once the ice cream has cooled completely, pour it into bowls or cones and garnish with fresh blackberries, if desired.
