Braised Beef Roast with Caramelized Onions
Ingredients:
For the Beef Roast:
- 3-4 lb beef chuck roast
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 large onions, sliced into rings
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven:
- Preheat your oven to 325°F (165°C).
- Prepare the Beef Roast:
- Season the beef roast generously with salt and black pepper on all sides.
- Sear the Beef Roast:
- In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
- Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove the roast from the pot and set aside.
- Caramelize the Onions:
- In the same pot, add the sliced onions and cook over medium heat until they start to caramelize, about 10-15 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes.
- Deglaze the Pot:
- Add the beef broth and red wine (if using) to the pot, scraping up any browned bits from the bottom.
- Stir in the tomato paste, Worcestershire sauce, dried thyme, and dried rosemary.
- Braise the Beef Roast:
- Return the beef roast to the pot, nestling it among the onions and liquid.
- Cover the pot with a lid and transfer it to the preheated oven.
- Braise the beef roast for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
- Serve:
- Remove the pot from the oven and let the beef roast rest for 10 minutes before slicing.
- Serve the sliced beef roast with the caramelized onions and sauce from the pot.
- Garnish with chopped fresh parsley.
