Broccoli Cheese Soup Recipe
Ingredients:
- 4 cups broccoli florets, chopped
- 2 medium carrots, shredded or finely diced
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 cups potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 2 cups milk or heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon paprika (optional)

- Sauté the Aromatics:
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic, and sauté until fragrant and translucent.
- Cook the Vegetables:
- Add the broccoli, carrots, and potatoes to the pot.
- Pour in the broth, bring to a boil, then reduce heat to low and simmer until the vegetables are tender (about 15-20 minutes).
- Create the Roux:
- In a small saucepan, melt 2 tablespoons of butter over medium heat.
- Stir in the flour and cook for 1-2 minutes until golden.
- Gradually whisk in the milk or cream until smooth and thickened.
- Combine and Blend:
- Pour the roux into the soup pot and mix well.
- Use an immersion blender to partially puree the soup for a creamy texture, leaving some vegetable chunks for variety (optional).
- Add Cheese and Seasoning:
- Stir in the cheddar cheese until melted and smooth.
- Season with salt, pepper, and paprika to taste.
- Serve:
- Ladle the soup into bowls and garnish with additional cheese or fresh herbs, if desired.
