Caramelized Sweet Potato Chunks

 

Ingredients:

  • 4 large sweet potatoes, peeled and cut into chunks
  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato chunks with olive oil, brown sugar, cinnamon, and salt.
  3. Spread the sweet potatoes evenly on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes or until they are tender and caramelized, stirring halfway through to ensure even cooking.
  5. Serve warm as a side dish or a healthy snack.
