For the Cookies:
• 2 cups all-purpose flour
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¾ cup unsalted butter, softened
• ¾ cup brown sugar
• ¼ cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1 ½ cups semi-sweet chocolate chips

• 8 oz cream cheese, softened
• ¼ cup granulated sugar

Make the Cheesecake Filling:
In a bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Scoop out small teaspoons of the mixture and place them on a parchment-lined tray. Freeze for 30–45 minutes, or until firm. -
Prepare the Cookie Dough:
In a medium bowl, whisk together the flour, baking soda, and salt.
In a separate large bowl, beat the butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla, mixing until well combined. Gradually stir in the dry ingredients until a dough forms. Fold in the chocolate chips. -
