Cheesy Baked Cabbage Steaks

- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or herb of your choice)
- 1/4 teaspoon red pepper flakes (optional)

Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Prepare the Cabbage:
- Remove any outer leaves from the cabbage and trim the stem end. Slice the cabbage into 1-inch thick rounds, making “steaks.”
- Season the Cabbage:
- Place the cabbage steaks on the prepared baking sheet. Brush both sides of each steak with olive oil and season with salt and pepper to taste.
- Bake the Cabbage:
- Bake the cabbage steaks in the preheated oven for 20-25 minutes, flipping halfway through, or until tender and slightly caramelized around the edges.
- Prepare the Cheese Mixture:
- In a small bowl, mix together the shredded mozzarella cheese, grated Parmesan cheese, minced garlic, dried thyme, and red pepper flakes (if using).
- Top the Cabbage Steaks:
- Remove the cabbage steaks from the oven and sprinkle the cheese mixture evenly over the top of each steak.
- Bake Again:
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Carefully transfer the cheesy baked cabbage steaks to a serving platter or individual plates.
- Garnish with chopped fresh parsley, if desired.
- Serve hot as a delicious and unique side dish.
