- 4 large potatoes (such as Russet or Yukon Gold)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 1/2 cups shredded cheese (cheddar, mozzarella, or your favorite cheese blend)
- 2 tablespoons chopped fresh parsley (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
- Prepare Potatoes: Wash and peel the potatoes. Slice them into 1/4-inch thick rounds.
- Season Potatoes: Place the potato slices in a large bowl. Drizzle with olive oil and season with salt, black pepper, garlic powder, and onion powder. Toss to coat evenly.
- Arrange on Baking Sheet: Arrange the potato slices in a single layer on the prepared baking sheet. Make sure they are not overlapping.
- Bake: Bake in the preheated oven for 20 minutes. Remove from the oven and flip the potato slices over.
- Add Cheese: Sprinkle shredded cheese over each potato slice. Return to the oven and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving, if desired.
Variations:
- Bacon Topping: Add cooked and crumbled bacon on top of the cheese before the final baking for extra flavor.
- Herb Infusion: Mix dried herbs such as thyme or rosemary with the seasonings for an aromatic touch.
- Spicy Kick: Add a pinch of cayenne pepper or paprika for a spicy twist.
These cheesy baked potato slices make a perfect appetizer or side dish, offering a delicious combination of crispy edges and gooey cheese. Enjoy!
