Cheesy Beef and Peppers

 

Ingredients

  • 1 lb ground beef

  • 1 large onion (sliced)

  • 2 bell peppers (any color, sliced)

  • 2 cloves garlic (minced)

  • 1 can diced tomatoes (14 oz)

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup sour cream (optional)

Instructions

  1. Cook the beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

  2. Add veggies: Add sliced onions, bell peppers, and garlic to the skillet. Cook for 5-7 minutes, until softened.

  3. Season: Stir in chili powder, cumin, paprika, salt, and pepper. Add diced tomatoes (with their juices) and simmer for 5 minutes.

  4. Cheese it up: Sprinkle shredded cheddar cheese over the beef and pepper mixture. Cover the skillet and let the cheese melt for 3-5 minutes.

  5. Serve: Top with a dollop of sour cream (optional) and serve hot!
