Cheesy Beef and Peppers

1 lb ground beef
1 large onion (sliced)
2 bell peppers (any color, sliced)
2 cloves garlic (minced)
1 can diced tomatoes (14 oz)

1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Salt and pepper to taste

1 1/2 cups shredded cheddar cheese
1/2 cup sour cream (optional)
Cook the beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
Add veggies: Add sliced onions, bell peppers, and garlic to the skillet. Cook for 5-7 minutes, until softened.
Season: Stir in chili powder, cumin, paprika, salt, and pepper. Add diced tomatoes (with their juices) and simmer for 5 minutes.

Cheese it up: Sprinkle shredded cheddar cheese over the beef and pepper mixture. Cover the skillet and let the cheese melt for 3-5 minutes.
