Cheesy Beef and Potato Casserole
Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 3 cups diced potatoes (about 3-4 medium potatoes)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped tomatoes
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions:
- Preheat your oven:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the Ground Beef:
- In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Prepare the Sauce:
- In a medium bowl, mix together the cream of mushroom soup, sour cream, milk, salt, black pepper, paprika, and dried thyme.
- Combine the Ingredients:
- In the skillet with the cooked ground beef, add the diced potatoes and the soup mixture. Stir to combine.
- Transfer the beef and potato mixture to the prepared baking dish. Spread it out evenly.
- Bake the Casserole:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes, or until the potatoes are tender.
- Remove the foil and sprinkle the shredded cheddar cheese and mozzarella cheese over the top. Add the chopped tomatoes.
- Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the casserole from the oven and let it cool slightly. Garnish with chopped fresh parsley, if desired.
