Cheesy Beef and Potato Casserole

 

 

 

Ingredients:

  • 1 pound (450g) ground beef
  • 1 medium onion (diced)
  • 3 medium potatoes (peeled and thinly sliced)
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese (optional, for extra cheesiness)
  • 1/2 cup beef broth
  • 1 can diced tomatoes (optional, drained)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter (for greasing)
  • Fresh parsley (chopped, for garnish)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish with olive oil or butter.
  2. Cook the beef mixture:
    • Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spoon.
    • Add the diced onion and cook until softened.
    • Season with garlic powder, paprika, oregano, salt, and pepper. Stir in the diced tomatoes (if using) and simmer for 5 minutes.
  3. Layer the casserole:
    • In the prepared baking dish, arrange a single layer of thinly sliced potatoes at the bottom.
    • Spread half of the cooked beef mixture over the potatoes.
    • Sprinkle 1 cup of cheddar cheese over the beef.
    • Repeat the layers (potatoes, beef, cheese) until all ingredients are used, ending with a layer of cheese on top.
  4. Add broth and bake:
    • Pour the beef broth evenly over the casserole to keep it moist.
    • Cover the dish with foil and bake for 45 minutes.
  5. Melt the cheese topping:
    • Remove the foil and sprinkle the mozzarella cheese on top (optional).
    • Bake uncovered for an additional 15-20 minutes, or until the cheese is golden and bubbly and the potatoes are fork-tender.
  6. Serve:
    • Garnish with fresh parsley and let the casserole rest for 5 minutes before serving.
