Cheesy Beef and Potato Roll
Ingredients:
For the Filling:
- 1 lb (450g) ground beef
- 2 medium potatoes, peeled and grated
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped
For the Dough:
- 1 package puff pastry (2 sheets), thawed
- 1 egg, beaten (for egg wash)
- Additional shredded cheese for topping
Instructions:
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Stir in the grated potatoes, paprika, dried oregano, salt, and pepper. Cook for another 5-7 minutes until the potatoes are tender. Remove from heat and let it cool slightly.
- Once cooled, mix in the shredded cheese and chopped parsley.
- Assemble the Roll:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out one sheet of puff pastry on a lightly floured surface to smooth out any creases.
- Spread half of the beef and potato filling evenly over the puff pastry, leaving about an inch border on all sides.
- Roll up the pastry tightly, starting from one of the long sides, and place it seam-side down on the prepared baking sheet.
- Repeat the process with the second sheet of puff pastry and the remaining filling.
- Bake the Roll:
- Brush the tops of the rolls with the beaten egg. Sprinkle additional shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
- Serve:
- Allow the rolls to cool for a few minutes before slicing. Garnish with additional chopped parsley if desired.
- Serve warm and enjoy!
Tips:
- You can customize the filling by adding other vegetables like bell peppers or carrots.
- For a spicier version, add some red pepper flakes or hot sauce to the filling.
