Cheesy Beef Enchilada Casserole Recipe
Ingredients:
- 1 lb ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1/2 cup water
- 1 can (10 oz) enchilada sauce
- 6-8 flour tortillas, cut into strips
- 2 cups shredded cheddar cheese
- Green onions, sliced (for garnish)
For Serving:
- Sour cream
- Tortilla chips
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Cook the Beef:
- In a large skillet, brown the ground beef over medium heat until no longer pink. Drain any excess grease.
- Add the chopped onion and minced garlic to the skillet with the beef, cooking until the onions are translucent.
- Stir in the taco seasoning and water. Bring to a simmer and cook until the mixture has thickened slightly, about 5 minutes.
- Assemble the Casserole:
- Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish.
- Arrange a layer of tortilla strips over the sauce, covering the bottom of the dish.
- Spoon half of the beef mixture over the tortillas, followed by a third of the cheese.
- Repeat with another layer of tortilla strips, the remaining beef mixture, another third of the cheese, and a final layer of tortillas.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake:
- Place the dish in the oven and bake uncovered for 20-25 minutes, or until the casserole is bubbly and the cheese has melted.
- Garnish and Serve:
- Remove from oven and let it cool for a few minutes.
- Garnish with sliced green onions.
- Serve hot with a side of sour cream and tortilla chips.
