Cheesy Beef Enchilada Casserole Recipe

 

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) enchilada sauce
  • 6-8 flour tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • Green onions, sliced (for garnish)

For Serving:

  • Sour cream
  • Tortilla chips

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cook the Beef:
    • In a large skillet, brown the ground beef over medium heat until no longer pink. Drain any excess grease.
    • Add the chopped onion and minced garlic to the skillet with the beef, cooking until the onions are translucent.
    • Stir in the taco seasoning and water. Bring to a simmer and cook until the mixture has thickened slightly, about 5 minutes.
  3. Assemble the Casserole:
    • Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish.
    • Arrange a layer of tortilla strips over the sauce, covering the bottom of the dish.
    • Spoon half of the beef mixture over the tortillas, followed by a third of the cheese.
    • Repeat with another layer of tortilla strips, the remaining beef mixture, another third of the cheese, and a final layer of tortillas.
    • Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  4. Bake:
    • Place the dish in the oven and bake uncovered for 20-25 minutes, or until the casserole is bubbly and the cheese has melted.
  5. Garnish and Serve:
    • Remove from oven and let it cool for a few minutes.
    • Garnish with sliced green onions.
    • Serve hot with a side of sour cream and tortilla chips.
