Cheesy Chicken and Biscuit Casserole
Ingredients:
For the Filling:
- 2 cups cooked chicken, shredded or diced
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup frozen peas and carrots, thawed
- 1 cup shredded cheddar cheese
For the Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup milk
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Filling:
- In a large mixing bowl, combine the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, dried thyme, and black pepper. Mix until smooth.
- Stir in the cooked chicken, thawed peas and carrots, and shredded cheddar cheese until well combined. Pour the mixture into a greased 9×13-inch baking dish.
- Prepare the Biscuits:
- In a large bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the milk, stirring until the dough comes together. Do not overmix.
- Turn the dough out onto a floured surface and gently pat it into a rectangle about 1/2-inch thick. Cut the dough into squares or rounds using a biscuit cutter or a knife.
- Assemble the Casserole:
- Arrange the biscuit pieces on top of the chicken mixture in the baking dish.
- Bake the Casserole:
- Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbly.
- Serve:
- Allow the casserole to cool for a few minutes before serving. Garnish with fresh herbs if desired.
