Cheesy Chicken and Rice Casserole
Ingredients:
For the Filling:
- 2 cups cooked shredded chicken
- 2 cups cooked white rice
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup frozen mixed vegetables (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup cold unsalted butter, cut into small cubes
- 1/4 to 1/2 cup ice-cold water
For Topping:
- 2 tablespoons melted butter
- 1 teaspoon dried Italian herbs (basil, oregano, thyme)
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the flour and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, a tablespoon at a time, mixing just until the dough comes together.
- Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, cooked rice, mozzarella cheese, cheddar cheese, sour cream, cream of chicken soup, cream of mushroom soup, and frozen mixed vegetables (if using).
- Add the garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
- Assemble the Casserole:
- Spread the chicken and rice mixture evenly into a greased 9×13 inch baking dish.
- Roll out the chilled dough on a lightly floured surface to fit the top of the baking dish.
- Place the dough over the filling, pressing the edges to seal. Trim any excess dough.
- Brush the top of the crust with melted butter and sprinkle with dried Italian herbs.
- Bake:
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the casserole cool for a few minutes before serving.
- Serve:
