Cheesy Chicken Parmesan Roll-Ups”

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper, to taste
  • 1 egg, beaten
  • 1 cup marinara sauce
  • 8 slices mozzarella cheese
  • Fresh parsley, chopped for garnish

Instructions:

Preparing the Chicken:

  1. Preheat your oven to 375°F (190°C).
  2. Flatten the chicken: Place each chicken breast between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.
  3. Season the chicken: Sprinkle salt and pepper on both sides of the chicken breasts.

Breading:

  1. Mix breadcrumbs: In a shallow dish, combine Italian breadcrumbs, Parmesan cheese, garlic powder, and dried herbs.
  2. Dip the chicken: Dip each chicken breast first in the beaten egg, then coat thoroughly with the breadcrumb mixture.

Assembly:

  1. Add cheese: Place two slices of mozzarella cheese on each chicken breast.
  2. Roll them up: Carefully roll the chicken breasts up and secure them with toothpicks.
  3. Place in a baking dish: Arrange the chicken rolls in a greased baking dish.

Baking:

  1. Add sauce: Spoon some marinara sauce over each chicken roll-up.
  2. Bake: Place the dish in the oven and bake for 25 minutes, or until the chicken is cooked through and the breadcrumbs are golden.

Serving:

  1. Add more cheese: In the last 5 minutes of baking, add an extra slice of mozzarella cheese on top of each roll-up and return to the oven until the cheese is bubbly and golden.
  2. Garnish and serve: Remove the toothpicks, garnish with chopped fresh parsley, and serve hot.
