Cheesy Chicken Quesadillas Recipe
Ingredients:
- For the Quesadillas:
- 2 cups cooked chicken, shredded
- 1 cup green bell pepper, diced
- 1 cup onion, diced
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 8 flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

- Guacamole
Instructions:
- Prepare the Filling:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and bell pepper, and cook until they are softened and slightly caramelized, about 5-7 minutes.
- Add the shredded chicken to the skillet, along with cumin, chili powder, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes to heat the chicken through.
- Remove the skillet from heat and set the filling aside.
- Assemble the Quesadillas:
- Lay out the flour tortillas on a flat surface.
- Evenly distribute the chicken and vegetable mixture over half of each tortilla.
- Sprinkle a generous amount of shredded cheese over the chicken mixture.
- Fold the tortillas in half, pressing down gently to seal them.
- Cook the Quesadillas:
- In a large skillet or griddle, heat the remaining tablespoon of olive oil over medium heat.
- Place the folded tortillas in the skillet (you may need to do this in batches depending on the size of your skillet).
- Cook each quesadilla for about 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted.
- Remove the quesadillas from the skillet and place them on a wire rack to cool slightly. This will help keep them crispy.
- Serve:
- Cut the quesadillas into wedges.
- Serve with sour cream, salsa, and guacamole on the side for dipping.
