Cheesy Chicken Taquitos
Ingredients:
- 2 cups cooked shredded chicken
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 12 small flour tortillas
- Cooking spray
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Filling:
- In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, cream cheese, sour cream, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.
- Assemble the Taquitos:
- Warm the flour tortillas in the microwave for about 20-30 seconds to make them more pliable.
- Spoon about 2 tablespoons of the chicken mixture onto the lower third of each tortilla.
- Roll each tortilla tightly and place it seam-side down on the prepared baking sheet.
- Bake the Taquitos:
- Lightly spray the tops of the taquitos with cooking spray.
- Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
- Add the Cheese Topping:
- Remove the baking sheet from the oven and sprinkle additional shredded cheese over the top of the taquitos.
- Return to the oven for another 2-3 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Garnish the taquitos with freshly chopped cilantro.
- Serve with additional salsa, sour cream, or guacamole on the side.
