Cheesy Chicken Taquitos

 

Ingredients:

  • 2 cups cooked shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 12 small flour tortillas
  • Cooking spray
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Filling:
    • In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, cream cheese, sour cream, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.
  3. Assemble the Taquitos:
    • Warm the flour tortillas in the microwave for about 20-30 seconds to make them more pliable.
    • Spoon about 2 tablespoons of the chicken mixture onto the lower third of each tortilla.
    • Roll each tortilla tightly and place it seam-side down on the prepared baking sheet.
  4. Bake the Taquitos:
    • Lightly spray the tops of the taquitos with cooking spray.
    • Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.
  5. Add the Cheese Topping:
    • Remove the baking sheet from the oven and sprinkle additional shredded cheese over the top of the taquitos.
    • Return to the oven for another 2-3 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Garnish the taquitos with freshly chopped cilantro.
    • Serve with additional salsa, sour cream, or guacamole on the side.
