Cheesy Hasselback Potatoes Recipe

 

Ingredients:

  • 4 medium-sized russet or Yukon gold potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet or baking dish with parchment paper or lightly grease it with olive oil.
  2. Prepare the Potatoes:
    • Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
    • Place one potato on a cutting board. Using a sharp knife, make thin slices across the potato, about 1/8-inch apart. Be careful not to slice all the way through; you want to keep the base of the potato intact. A good tip is to place wooden spoons or chopsticks on either side of the potato to prevent cutting all the way through.
  3. Season the Potatoes:
    • In a small bowl, mix the melted butter, olive oil, minced garlic, salt, and pepper.
    • Carefully fan out the slices of each potato and brush the butter mixture generously over and between the slices.
  4. Bake the Potatoes:
    • Place the potatoes on the prepared baking sheet or dish. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the edges are crispy and golden.
  5. Add the Cheese:
    • Remove the potatoes from the oven. Sprinkle the shredded cheddar or mozzarella cheese evenly over the tops of the potatoes, making sure some of the cheese falls into the crevices.
    • Sprinkle the Parmesan cheese over the top as well.
  6. Bake Again:
    • Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.
  7. Garnish and Serve:
    • Once the potatoes are done, remove them from the oven and let them cool slightly. Garnish with freshly chopped parsley for a pop of color and flavor.
    • Serve the Hasselback potatoes hot as a side dish or even as a main course.
