Ingredients:

  • 2 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 egg, beaten
  • 2 tablespoons melted butter
  • 1/4 cup milk (optional, to adjust consistency)
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Mixture:
    • In a mixing bowl, combine the mashed potatoes, shredded cheese (reserve some for topping), beaten egg, melted butter, salt, and pepper.
    • Mix well until the ingredients are fully incorporated.
  3. Adjust Consistency (Optional):
    • If the mixture feels too thick, add milk, a tablespoon at a time, until it reaches a scoopable consistency.
  4. Fill Muffin Tin:
    • Grease a muffin tin or line it with non-stick liners.
    • Spoon the potato mixture into the muffin cups, filling them to the top.
  5. Add Topping:
    • Sprinkle the reserved shredded cheese on top of each potato cup.
  6. Bake:
    • Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and slightly crispy.
  7. Cool and Garnish:
    • Let the potato bites cool for 5 minutes before removing them from the tin.
    • Garnish with chopped chives or parsley if desired.
  8. Serve:
    • Serve warm as a snack, appetizer, or side dish.
