Cheesy Meatball Bombs Recipe
Ingredients:
- For the Meatballs:
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- For the Bombs:
- 1 can refrigerated biscuit dough (8 biscuits)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup melted butter
- 2 cloves garlic, minced
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- For Serving:
- Marinara sauce, for dipping
Instructions:
- Prepare the Meatballs:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, pepper, and Italian seasoning. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter. You should get approximately 16 meatballs.
- Place the meatballs on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until cooked through. Remove from the oven and set aside to cool slightly.
- Assemble the Bombs:
- Open the can of refrigerated biscuit dough and separate the biscuits.
- Flatten each biscuit into a disk using your hands or a rolling pin.
- Place a small amount of shredded mozzarella cheese in the center of each flattened biscuit.
- Place a meatball on top of the cheese.
- Wrap the biscuit dough around the meatball, sealing the edges to form a ball. Repeat with the remaining biscuits and meatballs.
- Prepare the Garlic Butter:
- In a small bowl, combine the melted butter, minced garlic, dried parsley, garlic powder, and onion powder. Mix well.
- Bake the Bombs:
- Place the wrapped meatballs on a baking sheet lined with parchment paper or in a greased baking dish.
- Brush the tops of the dough-wrapped meatballs with the garlic butter mixture.
- Bake in the preheated oven for about 12-15 minutes, or until the biscuit dough is golden brown and cooked through.
- Serve:
- Remove the cheesy meatball bombs from the oven and let them cool slightly.
- Serve warm with marinara sauce on the side for dipping.
