“Cheesy Potato and Bacon Breakfast Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 cup grated potatoes, excess moisture removed
  • 1/2 cup grated cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 2 tablespoons chives, finely chopped

Instructions:

Preparing the Batter:

  1. Preheat the Oven and Prepare Muffin Pan: Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Combine Wet Ingredients: In another bowl, beat the eggs, milk, and melted butter until well combined.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients, stirring just until combined.

Assembling the Muffins:

  1. Add Fillings: Fold the grated potatoes, half of the grated cheese, half of the bacon, and the chives into the batter.
  2. Fill Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  3. Top with Cheese and Bacon: Sprinkle the remaining cheese and bacon on top of each muffin for extra flavor and crunch.

Baking:

  1. Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  2. Cool: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
