Cheesy Potato and Beef Burritos
Ingredients:
- 1 lb ground beef
- 2 cups diced potatoes
- 1 small onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 6 large flour tortillas
- Fresh cilantro, chopped (optional, for garnish)
- Hot sauce (optional, for serving)
Instructions:
- Cook the Potatoes:
- In a large skillet, heat a tablespoon of oil over medium heat.
- Add the diced potatoes and cook until they are tender and slightly crispy, about 10-15 minutes. Remove from the skillet and set aside.
- Cook the Beef:
- In the same skillet, add the ground beef and cook until browned. Drain any excess fat.
- Add the chopped onion, bell pepper, and garlic. Cook until the vegetables are soft.
- Season and Simmer:
- Add the cumin, chili powder, smoked paprika, salt, and pepper to the beef mixture. Stir well to combine.
- Pour in the beef broth and simmer for about 5 minutes until the mixture thickens slightly.
- Assemble the Burritos:
- Lay a tortilla flat on a clean surface.
- Spoon a portion of the beef mixture into the center of the tortilla.
- Add a portion of the cooked potatoes on top of the beef.
- Sprinkle with shredded cheddar cheese.
- Drizzle with sour cream.
- Roll the Burritos:
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top, securing the filling inside.
- Serve:
- Optionally, heat the rolled burritos in a skillet or on a griddle to crisp the outside and melt the cheese further.
- Garnish with chopped cilantro and a drizzle of hot sauce if desired.
