Cheesy Potato and Sausage Soup

 

 

 

Ingredients:

  • 500 grams of potatoes, peeled and diced
  • 300 grams of ground sausage
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a large pot over medium heat, cook the sausage until browned and crumbly. Remove the sausage with a slotted spoon and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent.
  3. Add the diced potatoes to the pot along with the cooked sausage and pour in the broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the heavy cream and bring the soup back to a simmer.
  5. Gradually add the shredded cheese, stirring continuously until the cheese is melted and the soup is creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley.
