Cheesy Potato and Sausage Soup
Ingredients:
- 500 grams of potatoes, peeled and diced
- 300 grams of ground sausage
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- In a large pot over medium heat, cook the sausage until browned and crumbly. Remove the sausage with a slotted spoon and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent.
- Add the diced potatoes to the pot along with the cooked sausage and pour in the broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and bring the soup back to a simmer.
- Gradually add the shredded cheese, stirring continuously until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
