Cheesy Potato Rounds

 

 

 

Ingredients:

  • 4-5 medium potatoes
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Peel the potatoes and slice them into thick rounds (about 1/2 inch thick).
    • Parboil the potato slices in salted water for 5-7 minutes until slightly tender. Drain and pat dry.
  2. Season the Potatoes:
    • In a large mixing bowl, toss the potato slices with melted butter, garlic powder, paprika, salt, and pepper.
  3. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  4. Bake the Potatoes:
    • Arrange the seasoned potato slices on the prepared baking sheet in a single layer.
    • Bake for 20 minutes, flip the slices over, and bake for another 10 minutes.
  5. Add the Cheese:
    • Sprinkle the shredded mozzarella (or cheddar) and Parmesan cheese over each potato slice.
    • Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from the oven and sprinkle freshly chopped parsley on top for garnish.
    • Serve warm as an appetizer, snack, or side dish.
