Cheesy Potato Rounds
Ingredients:
- 4-5 medium potatoes
- 1 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese (optional)
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Potatoes:
- Peel the potatoes and slice them into thick rounds (about 1/2 inch thick).
- Parboil the potato slices in salted water for 5-7 minutes until slightly tender. Drain and pat dry.
- Season the Potatoes:
- In a large mixing bowl, toss the potato slices with melted butter, garlic powder, paprika, salt, and pepper.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Bake the Potatoes:
- Arrange the seasoned potato slices on the prepared baking sheet in a single layer.
- Bake for 20 minutes, flip the slices over, and bake for another 10 minutes.
- Add the Cheese:
- Sprinkle the shredded mozzarella (or cheddar) and Parmesan cheese over each potato slice.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove from the oven and sprinkle freshly chopped parsley on top for garnish.
- Serve warm as an appetizer, snack, or side dish.
