Cheesy Vegetable Casserole
Ingredients:
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup cherry tomatoes (halved)
- 1 yellow bell pepper (sliced)
- 1/2 cup carrots (sliced thin)
- 1 cup mozzarella cheese (shredded)
- 1/2 cup Parmesan cheese (grated)
For the Creamy Sauce:
- 1 1/2 cups heavy cream
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions:
- Prepare the vegetables:
- Preheat your oven to 375°F (190°C).
- Arrange the broccoli, cauliflower, cherry tomatoes, bell pepper, and carrots in a greased baking dish.
- Prepare the creamy sauce:
- In a mixing bowl, whisk together the heavy cream, eggs, garlic powder, Italian seasoning, salt, and pepper.
- Assemble the casserole:
- Pour the creamy sauce evenly over the vegetables in the baking dish.
- Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
- Bake the casserole:
- Place the dish in the oven and bake for 25-30 minutes, or until the cheese is golden and bubbly and the vegetables are tender.
- Serve:
- Let the casserole rest for 5 minutes before serving.
- Garnish with fresh parsley or basil if desired.
