Chicken and Broccoli Stir-Fry
Ingredients:
- 1 lb (450g) chicken breast, thinly sliced
 - 3 cups broccoli florets
 - 1 large carrot, sliced
 - 2 tablespoons vegetable oil
 - Salt and pepper, to taste
 
For the Sauce:
- 3 tablespoons soy sauce
 - 2 tablespoons oyster sauce
 - 1 tablespoon cornstarch
 - 1 tablespoon water
 - 1 teaspoon sesame oil
 - 1 teaspoon sugar
 - 2 cloves garlic, minced
 - 1 inch piece of ginger, minced
 
Instructions:
1. Prepare the Sauce:
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, sesame oil, and sugar until smooth. Set aside.
 
2. Cook the Chicken:
- Season the chicken slices with salt and pepper.
 - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
 - Add the chicken and stir-fry until it is nearly cooked through and slightly browned. Remove the chicken from the skillet and set aside.
 
3. Stir-Fry Vegetables:
- In the same skillet, add the remaining tablespoon of oil.
 - Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
 - Add the broccoli and carrot slices. Stir-fry for about 4-5 minutes or until the vegetables are just tender but still crisp.
 
4. Combine Chicken and Vegetables:
- Return the chicken to the skillet with the vegetables.
 - Pour the sauce over the top, stirring to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
 
5. Serve:
- Serve your chicken and broccoli stir-fry hot, ideally over a bed of steamed rice or noodles.
