Ingredients:

  • 1 lb chicken breast or thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions:

  1. Prepare the Chicken:
    • Cut the chicken into bite-sized pieces. Season with salt and pepper.
  2. Brown the Chicken:
    • Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and brown them evenly on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. Sauté Vegetables:
    • In the same pot, add the diced onion and minced garlic. Sauté until the onions are translucent, about 3 minutes.
    • Add the sliced carrots and cook for another 5 minutes, stirring occasionally.
  4. Simmer the Stew:
    • Return the chicken to the pot. Add the diced potatoes and pour in the chicken broth. Stir in the dried thyme.
    • Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 20 minutes, or until the vegetables are tender.
  5. Add Peas and Season:
    • Add the frozen peas and simmer for an additional 5 minutes.
    • Adjust seasoning with salt and pepper to taste.
  6. Serve:
    • Ladle the stew into bowls. Garnish with fresh thyme leaves and serve with a slice of crusty bread for dipping into the savory broth.
