Chocolate-Covered Cookie Dough Truffles
Ingredients:
For the Cookie Dough:
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 tablespoons granulated sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
For the Coating:
- 2 cups semi-sweet chocolate chips or chocolate melting wafers
- 1 tablespoon vegetable oil or shortening (optional, for smoother melting)
- Additional mini chocolate chips for garnish (optional)
Instructions:
- Prepare the Cookie Dough:
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the milk and vanilla extract, mixing until well combined.
- Gradually add the flour and salt, mixing until a dough forms.
- Stir in the mini chocolate chips.
- Form the Truffles:
- Using a small cookie scoop or spoon, scoop out small portions of the cookie dough and roll them into balls.
- Place the cookie dough balls on a baking sheet lined with parchment paper.
- Freeze the cookie dough balls for at least 30 minutes, or until firm.
- Prepare the Chocolate Coating:
- In a microwave-safe bowl, melt the semi-sweet chocolate chips or chocolate melting wafers in 30-second intervals, stirring between each interval, until smooth. (Alternatively, you can melt the chocolate using a double boiler.)
- If using, stir in the vegetable oil or shortening to help thin the chocolate for easier coating.
- Coat the Truffles:
- Using a fork or dipping tool, dip each cookie dough ball into the melted chocolate, making sure it is fully coated.
- Allow any excess chocolate to drip off before placing the coated truffle back on the parchment-lined baking sheet.
- Immediately sprinkle the tops with additional mini chocolate chips, if desired.
- Set the Truffles:
- Allow the chocolate coating to set completely at room temperature, or place the truffles in the refrigerator to speed up the setting process.
- Serve:
- Once the chocolate is set, the truffles are ready to be served.
- Store any leftovers in an airtight container in the refrigerator.
