Chocolate-Covered Pecan Pralines (Turtle Candies)

Ingredients:

For the Praline Base:

  • 2 cups pecan halves
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Chocolate Coating:

  • 2 cups semisweet or dark chocolate chips (or a combination)
  • 1 tablespoon vegetable oil (optional, for a smoother coating)

Instructions:

  1. Prepare the Pecan Pralines:
    • Line a baking sheet with parchment paper and arrange the pecan halves in clusters (about 3-4 pecan halves per cluster).
    • In a heavy-bottomed saucepan, combine the granulated sugar, brown sugar, heavy cream, butter, and salt. Heat over medium heat, stirring constantly, until the mixture reaches 240°F (115°C) on a candy thermometer (soft ball stage).
    • Remove the saucepan from the heat and stir in the vanilla extract.
    • Working quickly, spoon the praline mixture over the pecan clusters, making sure each cluster is well coated. Let the pralines cool completely at room temperature until set, about 30 minutes to 1 hour.
  2. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, combine the chocolate chips and vegetable oil (if using). Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
    • Alternatively, melt the chocolate using a double boiler on the stovetop.
  3. Coat the Pralines:
    • Once the pralines are fully set and cooled, dip each praline into the melted chocolate, ensuring it’s fully coated.
    • Place the coated pralines back onto the parchment-lined baking sheet.
    • If desired, press a pecan half on top of each praline while the chocolate is still soft for added decoration.
    • Allow the chocolate to set completely at room temperature or place the pralines in the refrigerator to speed up the process.
  4. Serve and Store:
    • Once the chocolate has hardened, your pralines are ready to enjoy!
    • Store them in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer storage.

Tips:

  • Caramel Variation: For a more traditional turtle candy, you can add a layer of soft caramel over the pecan clusters before coating them with chocolate.
  • Chocolate Drizzle: For a decorative touch, drizzle some white chocolate over the dark chocolate coating after it has set.
  • Flavor Variations: You can sprinkle a pinch of sea salt on top of the chocolate before it sets for a salted caramel flavor.
