Chocolate Oatmeal Cup Cakes Recipe

 

 

 

Ingredients:

  • 1 cup quick-cooking oats
  • 1 1/2 cups boiling water
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup semi-sweet chocolate chips (optional)

Directions:

  1. Preheat Oven & Prepare Oats:
    • Preheat your oven to 350°F (175°C).
    • In a small bowl, combine the oats with boiling water and let stand for 10 minutes until the oats have absorbed the water and softened.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine Dry Ingredients:
    • In another bowl, whisk together the flour, cocoa powder, salt, baking soda, and cinnamon.
  4. Combine All Ingredients:
    • Gradually mix the dry ingredients into the creamed mixture.
    • Stir in the softened oats. Mix until just combined. Fold in the chocolate chips if using.
  5. Bake:
    • Pour the batter into greased coffee cups or ramekins, filling each about three-quarters full to allow room for the cake to rise.
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Serve:
    • Allow the cakes to cool slightly before serving. They can be enjoyed warm or at room temperature.
