Chocolate Peanut Butter Cup Cookies

 

Ingredients:

For the Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

For the Topping:

  • Miniature peanut butter cups, unwrapped
  • 1 cup milk chocolate chips
  • 1 tablespoon vegetable oil

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the peanut butter, egg, and vanilla extract, and mix until well combined.
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Stir in the semisweet chocolate chips.
  3. Shape the Cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Gently flatten each dough ball with the palm of your hand.
  4. Bake the Cookies:
    • Bake in the preheated oven for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
    • Remove the cookies from the oven and immediately press a miniature peanut butter cup into the center of each cookie.
  5. Prepare the Chocolate Topping:
    • In a microwave-safe bowl, combine the milk chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and smooth.
  6. Top the Cookies:
    • Spoon the melted chocolate over each peanut butter cup, spreading it to cover the top of the cookie.
  7. Cool the Cookies:
    • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
